Instant cameras & other options/suggestions?

I love my digital camera, but there's nothing quite like the imperfect and surprising result of film. I used to use my old Pentax 1000 for the thrill developing my own black and whites, but chemicals have gotten so expensive and mostly discontinued it just isn't worth it anymore.
It's my 21st birthday in a couple of weeks and I've got my heart set on an instant camera. I love the look of old-style polaroids, but I've been told film is so rare and expensive they arn't worth it.
I've been looking at the Diana Lomo (with an instant backing), the Polaroid 300 Series (not sure about that one) and the Fuji Instax.
It would be so fantastic if I could get some advice and opinions, thank you SO much!
I mean imperfect in the developing process, not the photographing stage. While developing your own film in a darkroom there's a certain degree of unpredictability due to factors such as the age of the chemicals and paper or number of seconds under the enlarger.

If you were running a lab, it would be out of business, you know, if what you're getting is unpredictability.

That's called quality control.
